Denumirea plantei provine din limba greaca unde \u201camaranthos\u201d inseamna cel care nu se va vesteji. In Grecia Antica era considerata o planta sacra, simbol al nemuririi. Incepand cu anii &#8217;70 amarathul a fost redescoperit ca planta benefica pentru sanatate. Pana in prezent s-au descoperit peste 60 de specii variate, raspandite in zone tropicale precum India, Malaezia, Indonezia, China.<!--more-->Amaranthul face parte din categoria supercerealelor fiind unul din cele mai nutritive alimente cunoscute avand o valoare proteica mai mare decat orezul, faina integrala de grau, ovaz sau secara. De asemenea este bogat in lizina (proteina de inalta calitate), fibre, vitamina A, E, B, D, aminoacizi esentiali si minerale ca fier, magneziu, zinc, fosfor, cupru si mai ales mangan, dar si mai mult calciu decat alte cereale. Contine 16% proteine pure si este lipsit de gluten.<\/p>\n<p>In urma cercetarilor stiintifice efectuate in 2003 la un institut din Canada s-a descoperit ca amaranthul , atat sub forma de cereala, cat si sub forma de ulei, reduce colesterolul rau din s\u00e2nge cu aproape 22%. Conform cercetarilor s-a demonstrat faptul ca amaranthul reduce nivelul unei lipoproteine foarte periculoase, cu un procent de 21 p\u00e2n? la 50. Amaranthul este mult mai eficient si mai rapid in scaderea colesterolului decat ovazul.<\/p>\n<p>In perioada sarcinii si a lactatiei este foarte recomandat consumul regulat de amaranth. De asemenea este foarte indicat daca sunteti vegetarian, daca urmati o dieta fara alimente ce contin gluten, daca incercati sa mancati sanatos pentru sanatatea inimii sau urmati un regim alimentar diabetic. Este un ingredient unic si neobisnuit dar in acelasi timp dar cu o mare valoare nutritiva. Daca in trecut acesta era consumat de catre razboinici si atleti deoarece le conferea energie si le imbunatea performantele, astazi el are o gama mult mai larga de recomandari si consumatori. Amaranthul are un profil nutritional iesit din comun si anume ne ofera fibre dietetice, calciu, fier, vitamine, minerale, lisina, cisteina precum si aminoacizi si proteine bune. Are un continut foarte redus de sodium, iar grasimile saturate lipsesc cu desavarsire. De asemenea din punct de vedere statistic contine fibre de 3 ori mai multe decat in grau, fier de 5 ori mai mult decat in grau si calciu de 2 ori mai mult decat in lapte.<\/p>\n<p>Amaranthul este una din putinele cereale ce contine si fitosteroli, ce reduc riscul dezvoltarii celulelor canceroase in organism si previn aparitia a numeroase boli grave.<\/p>\n<p>In ceea ce priveste \u00eembatr\u00e2nirea prematura, consumul regulat de amaranth previne dezechilibrele metabolismului de calciu \u0219i fier ce survin in mod normal la v\u00e2rsta \u00eenaintata.<\/p>\n<p>Deoarece amaranthul se coaguleaza foarte repede la rece se recomanda a fi consumat cat este cald. Se poate prepara, gati ca oricare alte cereal, dar devine mai lipicios atunci cand este fiert foarte tare, in schimb este deosebit de hranitor. Daca se gateste in oala cu presiune fierberea amaranthului dureaza doar 10 minute. Amaranthul se poate combina excelent impreuna cu hrisca, orezul brun, meiul dar si cu porumbul ceapa si fasolea.<\/p>\n<p>Semintele pot fi adugate cu success la mancarurile inabusite ca un ingredient bogat si agent de ingrosare. Se utilizeaza la prepararea pastelor si a diferitelor copturi, precum si al prepararea painii in amestecuri cu alte fainuri (o parte de amaranth la 3-4 parti de faina de grau). Daca se prepara clatite, paste sau diverse turtite se poate folosi amaranth in proportie de 100%. Cereala aceasta are o textura lipicioasa ce contrasteaza cu majoritatea cerealelor care au o textura pufoasa. Lasati sa se raceasca.&nbsp; Puneti toate ingredientele, cu exceptia frunzelor de salata, intr-un bol si amestecati usor. Dati la rece timp de o ora pentru a se raci si pentru a se intrepatrunde gusturile.<\/p>\n<p>Spalati si uscati frunzele de salata si folositi-le pentru a garnisi bolul de servire.
